Hooray it’s Star Wars Day!
Celebrate in style with an awesome refashioned tee + yummy batch of Gluten Free Vegan Yoda Cookies for May the 4th! (including my fab substitute for eggs in baking)
For my groovy gluten free, vegan gingerbread you’ll need: 1/2 cup brown sugar, 1.5 cups all-purpose gluten free flour, 1 egg (or corn starch for the egg substitute), 1 cup margarine, 1 package of instant pudding (in your fave flavour), 1/2 tsp baking soda, 1.5 tsp ginger & 1 tsp cinnamon.
Create a substitute for eggs by mixing 3 tablespoons of cornstarch with 1 tablespoon of warm water per egg required by the recipe.
Mix all ingredients together until they form a dough – add a splash of non-dairy milk if more liquid is needed to mix.
Grab an angel (or fairy) cookie cutter.
Roll your dough on a floured surface, cut out the cookies and remove their heads to create hilarious Yoda shapes!
Bake at 175°C (350°F) for 10 – 12 minutes, remove when golden brown and allow to cool.
While your cookies are cooling whip up a few small bowls of drizzle icing from non-dairy milk, icing sugar & food colouring.
Mix 4 – 5 parts icing sugar with 1 part milk until a loose paste forms then add your colours.
Drizzle the icing onto your cookies with a spoon, use a drop on the end of a toothpick to create the eyes, allow to dry & set and then dig in!
