Foolproof Dairy and Gluten Free Cupcakes

According to my doctor the combination of getting older, a “late-age” pregnancy, undergoing treatment for cancer twice + various possible inherited allergies and health issues means I’m forced to have a rather limited diet to avoid incredibly painful and disturbing bathroom campouts and hospital stays, harumph!

Thankfully I’m just as creative and experimental in the kitchen as I am in my refashionista studio and through much trial and error have finally managed to come up with a recipe for Foolproof Dairy and Gluten Free Cupcakes! Yay!

Grab my super simple recipe and whip up a batch today!

You’ll need: 1/2 cup margarine, 1/2 cup sugar, 1/2 cup all purpose gluten free flour, 3 drops vanilla extract, 2 eggs (or vegan equivalent – I like to use 1/2 cup pureed fruit instead of eggs) and a 1/2 tsp baking powder.

Mix all ingredients together, pop into cupcake tin and bake at 190°C for 18 – 20 minutes (until an inserted toothpick comes out clean).

Dairy/gluten free icing is a snap to make too! Simple combine 1/3 cup margarine with 2 – 3 cups of icing sugar and adorn your cupcakes with an extra sweet treat!
