Gluten & Dairy Free Holiday Cookies & Gingerbread Recipes

Having a body that rebels in a most painfully horrible manner when it’s given even the tiniest bit of gluten, dairy or alcohol means I have a rather limited selection when it comes to holiday treats, humph!

Thankfully I’ve managed to discover a couple of simple tricks to create my scrumptious Gluten & Dairy Free Holiday Cookies & Gingerbread Recipes!

Grab the easy vegan tutes below and whip some up in time for Santa!

For a batch of yummy holiday cookies you’ll need: 3/4 cup gluten free flour, 1 tsp baking powder, 1/3 cup sugar, 1 tsp vanilla, 1/3 cup margarine, 2 tbsp warm water, cookie cutters & 1/2 package fruit jello (we love strawberry but lime or peach are fab too!)

Mix all of the ingredients together into a soft dough.

Roll the dough flat and get cookie cutting!

Place your cookies on a baking sheet and bake at 180C/325F/Gasmark 3 for 8 – 10 minutes.

Once cooled, grab your munchkin(s) and get decorating!

For the gingerbread you’ll need: 1/2 packet of  gluten/dairy free pudding in your flavour choice, 1/2 cup margarine, 1/2 cup brown sugar, 1 & 1/2 cups gluten free flour, 1/2 tsp baking powder, 1 tsp nutmeg, 1/2 tsp ground ginger and 1 tsp cinnamon.

Mix all ingredients together, roll out the dough and cut into the shapes for your house. (I always cut out more than I need to make up for the inevitable cookie breakage)  Bake at 180C/325F/Gasmark 3 for 10 – 12 minutes.

Once cooled make up a batch of easy sugar glue (1 cup powdered sugar+ 2 – 3 tablespoons of water mixed into an edible cement) and put it all together!
