Here’s a hearty meal I like to call Turkey Bacon Saddlebags – it’ll fill the belly of any hardworking, tummy-rumbling cowboy just home from the dusty trail!
Get some: Turkey, Bacon, Peppers, Cheese (Broccoli is optional) – set aside for now
Grab a package (or 1 tbsp) yeast, 1 cup of warm water, 1 tsp of sugar, 1 tsp salt, 1 tbsp oil, 2.5 cups of (gluten free) all-purpose flour
Mix everything together (I also like to add some dried herbs & spices) & let rise for about 20 minutes – or until it’s nearly double in size. This will eventually be your saddlebag.
While your saddlebag dough is rising, chop up the turkey & bacon (or snip with scissors as I do) & fry with whatever spices you like. Cut the peppers into bite sized pieces & add to the cooked meat. You want the peppers to remain crunchy. Add whatever other vegetables you desire – I thought I might chuck some broccoli in but decided against it…crispy veg’ is best for this old cowgirl!
Once your meat & veg is done, roll (or press) out your risen dough onto a baking sheet.
Now comes the fun part: making your own BBQ sauce! Here are the secret ingredients to my famous BBQ sauce…there’s really no measurements involved, just mix them together to your own taste…
Spread your fancy homemade BBQ sauce on your dough
Throw your meat & veg mixture onto one half of your sauced dough
Top with some cheese…
Fold your dough closed, poke some air holes in it with a fork & bake at 200 celsius – 400 fahrenheit – Gasmark 6 for about 25 minutes, until the top is golden brown.
Slice into pieces and serve!
