Gluten Free Vegan Gingerbread & Royal Icing (+ Yoda cookies too!)

As my body reacts in a most painfully horrible manner when it’s given even the tiniest bit of gluten and dairy I have a rather limited selection when it comes to holiday treats, humph!

Fortunately I managed to put together a simple recipe that creates scrumptious gingerbread without gluten, dairy or eggs!

Grab the ingredients below & bake up some gluten free vegan gingerbread & egg-free royal icing (+ Yoda cookies too!)

So yummy and, best of all, gentle on my sensitive tummy!

Refashionista Sheri’s Gluten Free Vegan Gingerbread Recipe:

1.5 cups of gluten free all purpose flour

3/4 cup of margarine

1/2 cup of brown sugar

1 egg substitute (1 tbsp cornstarch + 3 tbsp lukewarm water)

A few generous shakes of nutmeg, cinnamon & ginger

A splash of dairy-free milk

1 package of your fave pudding flavour

Mix together, roll dough, cut with adorable cookie cutters & bake at 350F (175/180C) for 8 – 12 minutes.

Egg-Free Royal Icing:

3 tbsp chickpea water 3/4 cup icing sugar

Whisk chickpea water until frothy, add icing sugar & mix together.
