Gluten & Dairy Free Cranberry Muffins Recipe

As a wee lass I loved muffins so much it became my nickname!

Cranberry! One of my absolute favourites!

You need: 1.5 cups (gluten free) all-purpose flour, 1 cup of cranberries (either fresh, frozen or dried), 1 cup of (dairy free) milk, 1/2 cup sugar, 1/4 cup melted butter, 1 tbsp baking powder, 1 egg, pinch of salt

Chuck all of the ingredients together and mix well.

Pour your mixture into a greased/lined muffin or loaf pan (or both!)

Bake at 180C/350F/Gasmark 4 for 20 – 25 minutes.

Serve warm from the oven with a spot of tea! Delightfully delectable!

*If cranberries aren’t to your liking pretty much any fruit can be substituted – apple bits, raisins, berries & even mango pieces are all super tasty!
